VENDAIKKAI KULAMBU/OKRA GRAVY

Okra and ladies finger is a versatile and easy vegetable to cook.You can fry it,stuff it,kulambu or gravy....It is also one of my favorite veggies. 



Ingredients:
  1. Okra/Vendaikkai-6
  2. Onion-1/3cup
  3. Tomato-1/2
  4. Tamarind juice-1/3cup
  5. Turmeric Powder-1/2tsp
  6. Coriander Powder-1tsp
  7. Curry Powder-1 1/2tsp
  8. Shred Coconut-1/3cup
  9. Cinnamon-1/3stick
  10. Cloves-2
  11. Aniseeds-1/4tsp
  12. Ginger-few
  13. Curry Leaves
  14. Cumin seeds-1/4tsp
  15. Red-chili-1
  16. Water
  17. Salt-to taste
  18. Oil

To Grind:
  • Take a blender,put the shred coconut,cinnamon,cloves,aniseeds,ginger and water.Blend in a smooth paste.

Method:
  • Wash the okra in water.Remove the head and tail of the okra/vendaikkai.Cut them into round pieces.
  • Take a pressure cooker,add 1tsp of oil,onions and tomatoes.
  • When the seeds splutters add the vendaikkai and stir well.The okra gets fully coated with oil.
  • Add all powders,tamarind juice,salt ,water and mix well.Boil 10mis.
  • After add the blender paste and mix well.
  • Close the lid .pressure upto 3 whistles.
  • After 3 whistles remove the lid and mix it.
  • Take a frying pan,add 2tsp of oil,mustard seeds,cumin seeds,curry leaves,asafoetida and curry leaves.
  • Drop all the splutters seeds in okra gravy.
  • Hot and serve with "Boiled Rice".
